Ingredients
- 275g butter, unsalted & softened
- 1/2 cup (115g) castor sugar
- 2 cups (300g) plain flour (‘00’ fine, medium protein)
- 1/2 cup (90g) rice flour
- 2 tsp lemon and/or orange zest, finely chopped (optional)
- 1/2 tsp cardamon (optional)
Directions
- Preheat oven to 150°C
- Sift together dry ingredients into a bowl. Add zest.
- Chop butter into small squares and use fingers to rub into dry mixture.
- Knead mixture lightly to form a dough. If mixture is dry add a small amount of cold water.
- Press mixture evenly into a linned slice tray.
- Prick surface with a fork and sprinkle with a little extra sugar.
- Bake 35-40 minutes or until pale and dry.
