Ingredients

  • 275g butter, unsalted & softened
  • 1/2 cup (115g) castor sugar
  • 2 cups (300g) plain flour (‘00’ fine, medium protein)
  • 1/2 cup (90g) rice flour
  • 2 tsp lemon and/or orange zest, finely chopped (optional)
  • 1/2 tsp cardamon (optional)

Directions

  1. Preheat oven to 150°C
  2. Sift together dry ingredients into a bowl. Add zest.
  3. Chop butter into small squares and use fingers to rub into dry mixture.
  4. Knead mixture lightly to form a dough. If mixture is dry add a small amount of cold water.
  5. Press mixture evenly into a linned slice tray.
  6. Prick surface with a fork and sprinkle with a little extra sugar.
  7. Bake 35-40 minutes or until pale and dry.
