Ingredients

  • 6 large eggs
  • ½ cup cream
  • ¼ cup SR flour
  • 415g can salmon drained and flaked
  • 2 small zucchini grated
  • 1 onion finely chopped
  • 3/4 cup tasty cheese
  • 2 tblsp grated parmesan cheese
  • 6 cherry tomatoes, halved

Directions

  1. Preheated oven to 180°C
  2. Whisk eggs, cream and flour together in a large bowl to form a smooth batter.
  3. Stir in salmon, zucchini, onion and grated cheese.
  4. Season with salt and pepper.
  5. Pour mixture into a greased 20cm x 30cm rectangular oven proof dish, press in cherry tomatoes, and sprinkle with parmesan cheese.
  6. Bake in preheated oven for 30 - 40 minutes until set and golden.
  7. Allow to stand for few minutes before slicing.
