Salmon and zucchini slice

Ingredients
- 6 large eggs
- ½ cup cream
- ¼ cup SR flour
- 415g can salmon drained and flaked
- 2 small zucchini grated
- 1 onion finely chopped
- 3/4 cup tasty cheese
- 2 tblsp grated parmesan cheese
- 6 cherry tomatoes, halved
Directions
- Preheated oven to 180°C
- Whisk eggs, cream and flour together in a large bowl to form a smooth batter.
- Stir in salmon, zucchini, onion and grated cheese.
- Season with salt and pepper.
- Pour mixture into a greased 20cm x 30cm rectangular oven proof dish, press in cherry tomatoes, and sprinkle with parmesan cheese.
- Bake in preheated oven for 30 - 40 minutes until set and golden.
- Allow to stand for few minutes before slicing.
