Ingredients

  • 270g all-purpose flour
  • ¾ teaspoon bi-carb soda
  • ½ teaspoon salt
  • 220g smooth peanut butter
  • 170g unsalted butter softened to room temperature
  • 180g light-brown sugar
  • 120g cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 1 cups semisweet chocolate chips (200g)

Directions

  1. Preheat oven to 170°C. Line 30cm x 20cm baking dish with parchment paper
  2. In a small mixing bowl, whisk together the flour, baking soda, and salt.
  3. In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, combine the peanut butter, unsalted butter, brown sugar, and granulated sugar. Beat on medium speed until light and fluffy, about 3 minutes.
  4. Add the eggs one at a time, then the vanilla. Stop and scrape down the bowl. Beat again until well mixed, about 1 minute.
  5. With the mixer on low speed, gradually add in the flour mixture, and beat just until just combined. Stir in the chocolate chips.
  6. Transfer the dough to anbaking dish lined and spread toward the edges giving it a rough smooth.
  7. Bake for about 30-35 minutes. The cookie bars are done when the edges are set and golden brown and a toothpick or skewer inserted into the center comes out mostly clean. Let the cookie bars cool in the pan for about an hour before removing and cutting.
