Ingredients
- 270g all-purpose flour
- ¾ teaspoon bi-carb soda
- ½ teaspoon salt
- 220g smooth peanut butter
- 170g unsalted butter softened to room temperature
- 180g light-brown sugar
- 120g cup granulated sugar
- 2 teaspoons pure vanilla extract
- 2 large eggs
- 1 cups semisweet chocolate chips (200g)
Directions
- Preheat oven to 170°C. Line 30cm x 20cm baking dish with parchment paper
- In a small mixing bowl, whisk together the flour, baking soda, and salt.
- In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, combine the peanut butter, unsalted butter, brown sugar, and granulated sugar. Beat on medium speed until light and fluffy, about 3 minutes.
- Add the eggs one at a time, then the vanilla. Stop and scrape down the bowl. Beat again until well mixed, about 1 minute.
- With the mixer on low speed, gradually add in the flour mixture, and beat just until just combined. Stir in the chocolate chips.
- Transfer the dough to anbaking dish lined and spread toward the edges giving it a rough smooth.
- Bake for about 30-35 minutes. The cookie bars are done when the edges are set and golden brown and a toothpick or skewer inserted into the center comes out mostly clean. Let the cookie bars cool in the pan for about an hour before removing and cutting.
