Cauliflower soup

Ingredients
- 2 tbs oil
- 1 brown onion, coarsely chopped
- 2 garlic cloves, crushed
- 1 large cauliflower, cut into florets, stems thinly sliced
- 750 ml (3 cups) chicken stock
- 400 g white beans
- 1-2 tsp nutmeg
- 150 ml pouring cream
Directions
- Heat oil in a saucepan over medium heat. Cook onion & garlic for 3-4 mins until soft
- Add cauliflower, stock and nutmeg. Increase heat to high, bring to boil, then reduce heat and simmer, partially covered, for ~20 mins until cauliflowe is tender
- Blend soup until smooth. Add cream and season with salt & pepper.
- Serve with bread
