Ingredients

  • 2 tbs oil
  • 1 brown onion, coarsely chopped
  • 2 garlic cloves, crushed
  • 1 large cauliflower, cut into florets, stems thinly sliced
  • 750 ml (3 cups) chicken stock
  • 400 g white beans
  • 1-2 tsp nutmeg
  • 150 ml pouring cream

Directions

  1. Heat oil in a saucepan over medium heat. Cook onion & garlic for 3-4 mins until soft
  2. Add cauliflower, stock and nutmeg. Increase heat to high, bring to boil, then reduce heat and simmer, partially covered, for ~20 mins until cauliflowe is tender
  3. Blend soup until smooth. Add cream and season with salt & pepper.
  4. Serve with bread
