Air Fryer Roast Pork

Ingredients
- 1.5kg Roast Pork Leg or Shoulder (boneless) - Make sure it will fit in your air fryer
- Coarse Salt
- Olive Oil
Directions
- Remove pork from packing and place in fridge uncovered for 1 day
- Remove pork from netting and pat dry with paper towel. With a small sharp knife, score the rind at 1cm intervals, being careful to not cut into the meat.
- Rub the pork rind with salt for a minute and then pat dry
- Rub the pork all over with olive oil. Next add a generous amount of salt to the rind, being sure to rub into the scores.
- Wrap the pork with tinfoil but keep the skin exposed.
- Place the roast into the air fryer basket with the rind up and cook on 200°C for 20 minutes, then 180°C until cooked through (approx. 25 minutes for every 500g). The internal temperature should be 70-75°C.
- Transfer the roast to a carving board or plate, cover with tinfoil & allow to rest for 10 minutes. Carve and serve.
