Ingredients

  • 1.5kg Roast Pork Leg or Shoulder (boneless) - Make sure it will fit in your air fryer
  • Coarse Salt
  • Olive Oil

Directions

  1. Remove pork from packing and place in fridge uncovered for 1 day
  2. Remove pork from netting and pat dry with paper towel. With a small sharp knife, score the rind at 1cm intervals, being careful to not cut into the meat.
  3. Rub the pork rind with salt for a minute and then pat dry
  4. Rub the pork all over with olive oil. Next add a generous amount of salt to the rind, being sure to rub into the scores.
  5. Wrap the pork with tinfoil but keep the skin exposed.
  6. Place the roast into the air fryer basket with the rind up and cook on 200°C for 20 minutes, then 180°C until cooked through (approx. 25 minutes for every 500g). The internal temperature should be 70-75°C.
  7. Transfer the roast to a carving board or plate, cover with tinfoil & allow to rest for 10 minutes. Carve and serve.
