--- KcalSpiced with ginger, these sweet gingerbread biscuits can be cut into a variety of shapes and decorated with icing and cachous
Ingredients
- 125g butter
- 175g (1/2 cup) golden syrup
- 100g (1/2 cup) brown sugar
- 300g (2 cups) plain flour
- 40g (1/4 cup) SR flour
- 1 tsp bicarb soda
- 1 tbs ground ginger
- 1/2 tsp mixed spice
- pinch salt
- 1 egg, lightly beaten
Directions
- Preheat oven to 170°C
- Melt butter, golden syrup and brown sugar in a small saucepan. Set aside and allow to cool.
- Mix dry ingredients together in a bowl.
- Pour in cooled syrup and lightly beaten egg and mix well.
- Turn out on to a lightly floured surface and knead until smooth.
- Cover in plastic wrap and refrigerate for 30 mins.
- Roll out dough between two sheets of baking paper, to a thickness of 3-4 mm.
- Cut into shapes with a biscuit cutter and bake for 8-10 mins or until firm and slightly coloured.
- Cool on a wire rack.
- Ice thinly with lemon icing.
