Spiced with ginger, these sweet gingerbread biscuits can be cut into a variety of shapes and decorated with icing and cachous

Ingredients

  • 125g butter
  • 175g (1/2 cup) golden syrup
  • 100g (1/2 cup) brown sugar
  • 300g (2 cups) plain flour
  • 40g (1/4 cup) SR flour
  • 1 tsp bicarb soda
  • 1 tbs ground ginger
  • 1/2 tsp mixed spice
  • pinch salt
  • 1 egg, lightly beaten

Directions

  1. Preheat oven to 170°C
  2. Melt butter, golden syrup and brown sugar in a small saucepan. Set aside and allow to cool.
  3. Mix dry ingredients together in a bowl.
  4. Pour in cooled syrup and lightly beaten egg and mix well.
  5. Turn out on to a lightly floured surface and knead until smooth.
  6. Cover in plastic wrap and refrigerate for 30 mins.
  7. Roll out dough between two sheets of baking paper, to a thickness of 3-4 mm.
  8. Cut into shapes with a biscuit cutter and bake for 8-10 mins or until firm and slightly coloured.
  9. Cool on a wire rack.
  10. Ice thinly with lemon icing.
