Ingredients
- 1 1/2 cups (225g) self-raising flour
- 1/2 cup (40g) desiccated coconut
- 2 tsp finely grated lime zest
- 1 cup (220g) castor sugar
- 125g butter, melted
- 2 eggs
- 1 cup (250ml) coconut milk
Icing
- 1 1/2 cups (240g) icing sugar
- 2 tbs lime juice
Directions
- Preheat oven to 180°C. Grease and line loaf tin
- Combine flour, coconut, lime zest and sugar in a bowl.
- Whisk butter, eggs & coconut milk in a small bowl. Add to flour mixture and stir to combine.
- Pour into prepared tin. Smooth surface and bake for 45 mins
- Cool in tin for 5 mins and then turn out onto a wire rack to cool completely
- Mix icing ingredients and drizzle over cake.
