A zesty moist coconut cake

Ingredients

  • 1 1/2 cups (225g) self-raising flour
  • 1/2 cup (40g) desiccated coconut
  • 2 tsp finely grated lime zest
  • 1 cup (220g) castor sugar
  • 125g butter, melted
  • 2 eggs
  • 1 cup (250ml) coconut milk

Icing

  • 1 1/2 cups (240g) icing sugar
  • 2 tbs lime juice

Directions

  1. Preheat oven to 180°C. Grease and line loaf tin
  2. Combine flour, coconut, lime zest and sugar in a bowl.
  3. Whisk butter, eggs & coconut milk in a small bowl. Add to flour mixture and stir to combine.
  4. Pour into prepared tin. Smooth surface and bake for 45 mins
  5. Cool in tin for 5 mins and then turn out onto a wire rack to cool completely
  6. Mix icing ingredients and drizzle over cake.
