Ingredients

  • 185g butter, softened
  • 175g (1 cup) brown sugar
  • 110g (1/2 cup) white sugar
  • 3 eggs
  • 300g (2 cups) self-raising flour, wholemeal
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 3 bananas, mashed

Directions

  1. Preheat oven to 170°C fan . Grease and line base and sides of a loaf tin.
  2. Place butter, sugar and eggs in the bowl of a food processor and process until well combined.
  3. Add bananas and process until smooth.
  4. Mix dry ingredients together and with the processor running gradually add until combined.
  5. Spoon into loaf tin and bake for 65-70 mins or until cooked in the centre
